Peppermint, Coconut & Dark Chocolate CBD Date Bites


The holidays bring constant temptation… but we’re here to let you in on a little secret: dark chocolate can actually help support your endocannabinoid system!

These little guys combine dates, pecans and coconut for a festive flair, then they are dipped in peppermint-infused, antioxidant-rich dark chocolate to boost the endocannabinoid system. The compounds in dark chocolate work similarly to CBD; they slow the breakdown of our own endo-cannabinoids so that our bodies can use more of what they’re naturally producing. When it comes to nutrition, dark chocolate is rich in: 

  • antioxidants: help to prevent cell and tissue breakdown and help eliminate free radicals

  • flavanols: known to lower blood pressure and maintain the elasticity of blood vessels, which contributes to normal blood flow and heart function

About the Recipe

This recipe was developed by Rustic Supper based in Columbia, Missouri. These sweet holiday treats combine dates, peppermint, and coconut for a festive flair, then are then dipped in dark chocolate to boost the endocannabinoid system.

  • 2 c dates

  • 1 tsp baking soda

  • 2 c boiling water

  • 1 ½ c pecans, chopped

  • 1 stick butter, melted (Optional: Infuse with peppermint using the LEVO Oil Infusion Machine)

    1. Fill herb pod with 1 tbsp dried peppermint

    2. Add butter to basin 

    3. Set temperature at 165˚F and time at 25 min

    4. Allow to infuse and dispense into mixing container to use or jar to store 

  • 2 c unsweetened shredded coconut, plus additional for topping

  • ½ c honey (we recommend using Potli CBD-infused Honey)

  • 1 tsp salt, plus additional for topping

  • ½ tsp peppermint extract or 1 drop food-grade* peppermint essential oil (this ingredient is not needed if you infuse your butter with peppermint using the LEVO) 

  • 20 oz dark melting chocolate

  • *Please note: not all essential oils are safe to ingest! In fact, we typically don’t recommend that anyone ingest essential oils without the guidance of a certified professional. In this recipe, the essential oil is diluted by and combines with the oils in the chocolate to make it generally safe for consumption (although you should always check with a certified healthcare professional before adding any herbs or essential oils to your routine) 

  1. Place dates in bowl with boiling water and teaspoon of baking soda; let sit for 5-10 minutes, until softened

  2. In a blender, add dates, 1 c of the water and pecans. Blend until combined, about 2-3 minutes. Mixture will be slightly chunky

  3. Pour mixture into a bowl and add butter, coconut, honey and salt

  4. Place in the refrigerator and allow to cool for 30 minutes

  5. Line a sheet tray with parchment

  6. With slightly damp hands, roll balls of the mixture and line on sheet tray

  7. Place balls back in the refrigerator to chill for an additional 20-30 minutes

  8. Melt chocolate over a double boiler and stir in peppermint extract

  9. Dip balls one by one and place back on sheet tray; top with additional coconut and salt

  10. Serve immediately or store in refrigerator until you’re ready to snack!

If you'd like to enhance this recipe with cannabinoids, consider using one of the products below. We recommend using between 5-30mg of CBD per serving, depending on your needs and body weight (typically 1-5mg of CBD per 10 lbs of body weight). To enhance this recipe with cannabinoids, consider substituting some or all of the honey in each recipe for Potli’s CBD honey.
