Egg Endo Muffin
These muffins are sweet and fluffy on the outside with an egg core, helping to fill you up and give you a boost of protein to take on the day!
When it comes to nutrition, eggs are a good source of:

The thyme in this recipe has the relieving terpene caryophyllene, which is a powerful anti-inflammatory for the:
Brain: caryophyllene can reduce chemicals in the brain that cause stress and inflammation, helping to protect the brain
Digestive system: caryophyllene can reduce inflammation in the gut, supporting healthy digestion
The black pepper in MONQ’s personal diffuser also has caryophyllene, and the bitter orange is rich in the uplifting terpene limonene, a great complimentary terpene!
About the Recipe
This recipe was developed by Rustic Supper with Peachtree Catering for our Heart of Health Exchange Mindful Meal Breakfast. Made with Rosebud CBD oil, fresh thyme and paired with MONQ’s “Active” personal aromatherapy diffuser with black pepper, bitter orange, and sage essential oils, these muffins are not only a delight to tastebuds — they are a delight to your endocannabinoid system!
For the muffins:
Preheat the oven to 400 degrees, grease 6 large muffin cups/pan
Mix flour, sugar, baking powder, salt and baking soda together in a mixing bowl
Fold in cheese, yogurt, beaten eggs, thyme, and CBD oil. Continue to fold only until the mixture is well combined
Spoon enough batter to fill 1/4 of each muffin cup
Place 1 hard-boiled egg into the center of each muffin cup, ensuring that the larger end of the egg is at the bottom
Spoon batter into each muffin cup, filling around the egg so that it is completely covered and centered
Bake for 18 minutes, and remove from the oven to a cooling rack
Sere as soon as the muffins can be removed easily from the muffin cups/pan
Best served warm!
This recipe creates 6 servings
2 c all purpose flour
1/2 c sugar
1 tbsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 c shredded provel cheese
1 c plain yogurt
2 eggs (beaten)
6 whole eggs (in shell for hard-boiling; see directions below)
1 tbsp fresh thyme (chopped)
To Make Hard-Boiled Eggs:
Place whole eggs in a saucepan and cover with water
Bring to a boil over medium-high heat. Once water boils, immediately turn off heat and cover pan for 5 minutes
Immediately place eggs in an ice bath to cool for another 5 minutes
Gently peel eggs and reserve at room temperature for later use
